Even in the best cocktail bars, the wine list is often an afterthought. Not so at Drink. Continuing the spirit of collaboration which began over 10 years ago at No.9 Park, Executive Wine Director Cat Silirie and General Manager John Gertsen, along with Chef Barbara Lynch, were determined to create a list of wines by the glass that would be surprisingly delicious and suit a variety of desires: Some work perfectly as an aperitif – we especially love the Loimer Cuvee Cat Gruner Veltliner to begin an evening-, some might be enjoyed with the delicious small bites from the kitchen – perhaps a full white from the Rhone or an inky red-, and others are especially brilliant to savor post-dinner.
We often like to refer to the wines at Drink as “discovery wines” as our guests – and staff- really do feel that they have happened upon some incredible find when they taste a wine that is so pleasingly quaffable, of great quality, not expensive, and previously unknown!
Under Cat’s guidance, the talented staff receives weekly wine education so that in addition to being immersed in the finer points of the craft of the cocktail, the team is constantly learning about elegant wine service, glassware, and, of course, the very special wines themselves.
